Simple Pasta Dinner



Just a quick post before bed!

I made a sundried olive and rosemary focaccia and pasta with italian sausage, fire roasted tomatoes, mushrooms and fresh basil!

Focaccia recipe here:http://raptortoe.com/2010/โ€‹10/06/tomato-focaccia/ย Just replace tomatoes with same amount of pitted sundried olives and throw in some rosemary.

For the pasta, sautee two italian sausages removed from the casing until browned, add 1/2 cup roughly chopped mushrooms.

Add 1 can of fire roasted tomatoes, or just diced tomatoes, strain if too much liquid. Cook and reduce until thickened, season with salt and pepper.

Add a small handfull of fresh minced basil and toss with your favourite pasta!

Italian Sausage & Sundried Tomato Alfredo – Quick Pantry Pasta

So.. Hungry.



I’m lucky enough to have amazing parents willing to taxi around my 24 year old car-less body to and from the grocery store from time to time. So that’s where I was after work, unfortunately I hadn’t eaten dinner, so it was definitely difficult.

I find I don’t have problems with over purchasing, or purchasing what I don’t need in the grocery store when hungry. My only problem is a bit of attitude, and how I can’t stop thinking about how I need to eat some food.



So as soon as I got home I needed something filling and comforting.

Pork Meatballs (also featuring tomato sauce and pasta!)

This is another one of those last-minute-unplanned-incredibly-successful dinners. I had some defrosted pork in the fridge, some leftover sauce, and tons of pasta in the cupboard.

For meatballs and hamburgers/meatloaf I generally follow one recipe.

So far so good! Few headaches, but other than that a-ok. Michael seems to be enjoying it aswell. Especially the fruit/yogurty breakfast.

I am a Champion of Improvisation – Pork Sausage and Tomato Alfredo Linguinie

You may not be aware but Michael and I are in the middle of moving. Or in the middle of about to be moved?

Regardless, we’re packed, waiting to leave and are quite lacking in the ingredients for dinner area.

So tonight I had a look in the pantry/fridge and came up with a Pork Sausage and Fresh Tomato Alfredo Linguine. I also made some garlic bread out of some 3 day old french bread.

You can't believe how happy my belly was.
