Noodle Box!

Or as we say "Noodo-box".

 

This is probably one of my favourite restaurants. It’s simple, delicious and consistent. I think I really love it because I don’t eat there often, it’s always something to look forward to, and taking transit to Kits isn’t really my most favourite thing to do, so it doesn’t happen often.

Lemongrass Chicken

Perfect for the bbq! Srsly!

 

My favourite is Pho, Michael’s favourite is lemongrass chicken. (although he’s been ordering pho lately, I am a converter of all. The United Church of Beef Broth.)

 

So for my wonderful, amazing, mass amount of chicken consuming- significant other. I decided to try making it!

 

I’ve made it with packet lemongrass mixes before, but it never tastes right. Nothing from a package ever tastes right.

Butter Chicken Poutine

This was SO worth how terrible it is for me, btw.

 

Poutine is a Canadian thing. I’ve met a few Americans who have NO idea what it is, which I find surprising, because a lot of “down home American food” consists of the same ingredients. Fries, cheese curds and gravy.

 

But this was far from traditional, but oh sooooo delicious.

Pseudo Popcorn Chicken

Now I unfortunately I don’t have a step by step process to show you. I was much too hungry and needed to cook fast. But I did have time to snap a photo at the end!

 

Basically just follow the same thing I did with the buffalo chicken cutlets, but cut the chicken into much smaller pieces. I also double breaded these guys, and fried them in a shallow pan of oil. Once they’ve browned on both sides, take them out of the oil and onto a paper towel to drain some of the oil. Then sprinkle with salt!

I’m gonna be blunt with this. I LOVE chicken.  If I could pick one meat to eat for the rest of my life it would be chicken (Lamb is second…sorry lamb, its not you, it’s me). So I’m always incredibly excited when I have the time to make a roast chicken. There are generally three ways I go about it.

If I really have a lot of time, I like to brine my chicken for a few hours. I just mix a salty concoction and add some garlic, a bay leaf, pepper, paprika and whatever dried herbs I feel like; and submerge the chicken for however long I have.

If I feel like taking the time and am feeling pretty patient (I’m a leo, patience is fleeting), I like to put some herby delicious butter under the skin.

If I have all time in the world, am well rested and feelin’ good. I do both.

Roasted Chicken!

I made roast chicken last night. It turned out very well and I couldn’t resist tearing off the wings and eating them before taking the picture.

I put the chicken in a brine for a few hours that also had some fresh thyme, garlic and a bay leaf.

Before baking I dried off the chicken and topped with salt, pepper, paprika and more thyme, squeezed a lemon inside and stuffed the lemon pieces and a piece of onion inside.

I then dry roasted for about 1.5 hours at 350. This was about a 1.4kg bird.

I served this with garlic mashed redskin potatoes with skin on and steamed carrots. I also made a quick sauce out of the drippings, but I made the mistake of squeezing the lemon from the bird cavity into it and it was very lemony. I added some honey to cut the acidity, but that didn’t save it much.(So I just used a little bit :P)
