Mini Peach Pies

Yeah these were good AND easy!

 

 

So I went to Donalds Market earlier in the week and they had whole cartons of peaches for $2.99! So I had to buy them and I had to make something.

 

What you need:

  • Peaches! 10-11 depending on their size, mine were pretty small
  • sugar
  • flour
  • Puff pastry or pie dough

I’m not putting any amounts as this can vary depending on the quality and ripeness of your peaches, and how much you have. So we’ll use common sense, kay kay?

 

 

First and foremost, we have to peel the peaches. This basket was full as well, it's hard not to eat ripe in season peaches, I CAN'T HELP IT. Anyway. Peeling peaches.

 

 

Get yee some ice water. And start boiling water in another pot!

 

 

Slice and X in the bottom of every peach. Doesn't have to be deep, just into the skin.

 

 

Put peaches in boiling water for just under a minute, then plunge into ice bath!

 

 

Peel em! Yeah it's really that easy.

 

 

Done!

 

 

It can be very difficult to slice them and remove the pits. So y'know. try not to cut yourself.

 

 

Then slice them into cubes! Okay. The tough part is done now.

 

 

Add to a pot and add some sugar. I added about 1/2 a cup because I don't like my pies to be too sweet, but you can adjust this to your tastes!

 

 

I forgot the flour on this, about 2 heaped tbsps.

 

 

Cook until it softens slightly and looks like something you absolutely must put on pancakes. Or a spoon.

 

 

I bought one of these pie maker press things. I don't know why. It's totally a unitasker and sucks. I swear. Use a cookie cutter instead.

 

 

$5.99 for puff pastry! What kinda world is this!

 

 

Flour and roll to about 1/8th of an inch thin.

 

 

Stamp out dough. 1 on each side!

 

 

Put the bottom on one side of the press and add filling. Add the top and press!

 

 

There we go! They look a little wonky but they'll puff up and brown and look fine!

 

 

Brush with eggwash and sprinkle with coarse sugar or sanding sugar.

 

 

Bake at 350 for about 20 minutes or until golden brown!
