I love making my own salsas. Pineapple salsa is my allll time favourite. But this is a good one too. Ugh. Peach salsa is awesome too.
CORN! This was two cobs worth.
Black beans. An equal amount. Slightly blurry. God help you if your beans are focused.
Add! Diced tomato, onion, jalapeno, garlic, cilantro, green onion, salt, pepper and a squeeze of lime juice. I think I added a squirt of sriracha as well.
Mix! Taste and add more seasoning if you need. Let sit, or leave in the fridge until ready to eat! I served mine with some mexican-y spiced chicken, rice and a quick green salad. Yum!

I love salsa in any form but black bean is probably my favorite! I have a recipe that I’ve just never tried at home. *shame! Yours looks so delicious and flavorful! ♥- Katrina
