Ham and Pea Soup
Perfect on a kinda gloomy day like today!
I think ham and pea soup is my favourite soup. I’m not certain though, I can change my mind pretty easily. But it’s almost like eating a ham dinner in a bowl. So good.
What you need:
- 1 ham bone with bits o ham on it, leftovers from a ham dinner are PERFECT. Just freeze it after dinner and save it for soup!
- 2-3 small yellow potatoes, peeled and diced
- 1/2 cup diced carrots
- 1/2 white onion, diced
- 1 cup dried split peas
- 3-4 cups water
- 1 bay leaf
- few sprigs of thyme
- big handful of fresh parsley
- s&p to taste
Sautee 1/2 of a white onion, 1/2 cup of carrots and 2-3 small potatoes in some olive oil.
Add about 1 cup of split peas. I had a mix of green and yellow. Your ham bone. Mine still had a ton of meat on it. I kinda forgot how much meat I left on it. But whaaatever. Cover with water. I added a bay leaf, and also some sprigs of thyme (wrapped in a silicone cooking band, improvise!). Simmer until peas have disintegrated. About an hour. Remove ham bone and take off meat. Dice and add to soup!
The soup should be nice and thick due to the peas and potato. Add a big handful of parsley. Season with s&p to taste. Remember ham's is salty! So be careful!
