I wasn’t sure what to make for lunch, I was thinking pasta, but I had some bacon and eggs and it sounded perfect!
- 4 eggs
- 2 strips double smoked bacon, sliced
- 3-5 mushrooms, sliced
- 3 tbsp finely chopped onion (mostly for flavour)
- 1/2 cup canned black beans
- 1 tsp chili garlic sauce
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh thyme
- 1/4 cup grated cheddar
- salt and pepper to taste
Preheat oven to 375.
Begin by sauteeing the bacon until crisp, add onions and mushrooms and cook until softened. Add black beans, garlic chili sauce, parsley, thyme, salt and pepper. Stir to combine.
Separate mixture into two ramekins, crack two eggs into each ramekin, being careful not to break the yolks. Sprinkle with additional salt and pepper and sprinkle each with cheddar cheese.
Bake until egg has set, top with a little sriracha and serve with toast!
