Banana Bread in the Night.


My breakfast tomorrow morning! Also featuring coffee.




There’s one sweet thing I bake regularly, and that’s banana bread. Solely because we’re bad at eating fruit, and bananas always get too brown. Thankfully they survive well in the freezer.


And as soon as I have 3, BAM.


Banana bread time!!



Banana Bread Recipe:


  • 3 large, super ripe bananas. I don’t wanna see any yellow on you! (you can use slightly less ripe bananas if you can’t wait. I’ll only judge you slightly.)
  • 1 large egg
  • 1/2 cup melted butter, cooled. (oil works fine, too)
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract (I used vanilla bean paste, being that it still- is all I have.)
  • 1 tsp cinnamon
  • 1 1/4 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of Salt
  • 1/3 cup plus 2 tbsp finely chopped walnuts (or raisins, or chocolate chips, or gumballs for all I care.)

In a large bowl, combine bananas, butter, vanilla, sugar and egg. I find using a wisk works great to mash up banana efficiently.


In another bowl combine all dry ingredients, except for walnuts, and mix. Fold into wet mixture until it is thoroughly combined, but do not over mix. Mix in 1/3 cup chopped walnuts.


Grease and flour a 9x5x3 or whatever sized loaf pan or pie plate, or muffin cups. (I’m all about culinary liberties)


Pour into the prepared pan and sprinkle with remaining walnuts. Bake for 45 - 50 minutes until a tooth pick inserted into the middle of the loaf comes out clean.



Allow cool in the pan for 15 minutes, then remove from the pan and cool some more! Or just eat it.
