Breakfast for Dinner! My way.

I love eating eggs. Well, breakfast food in general. Eggs, hash browns, sausages, bacon, hollandaise, it’s ALL GOOD.

Today I came home from work pretty ravenous, and decided to put the last two eggs to use.

Eggs are the ONLY thing Michael seems to cook for himself, so I was lucky enough to have two for myself.  I made a version of one of my most favourite breakfasts. It’s kind of mexican inspired, but nothing authentic.


The real recipe!

1: Layer the following in order into a ramekin or oven proof dish:

  • Spanish Rice
  • Cilantro
  • Black Beans
  • Chorizo Sausage
  • Avocado
  • Poached Egg
  • Cheddar

2: BROIL until cheese is melted

3: Top with Salsa/Hot Sauce and enjoy with a slice of toast!

4: Die because it was so delicious and your life is now complete. OPTIONAL!

What I ended up doing:

1: Made rice with hot sauce in it.

2: Cooked up and sliced a smokie.

3: Layered in the rice, sausage, avocado, and topped it with two sunny side up eggs.

4: Topped with cheese and broiled. Added a drizzle or sriracha sauce and had with some toast!

Consumed it all in about 1 minute.
