I haven’t made a post in a long while! Mostly because I can’t seem to find my camera charger… No pictures = no fun! But a cell phone picture will suffice for now.
This morning I decided to make Banana Pancakes!
Now, I do have my own recipe for pancakes, but not having any flour I used this pancake mix I had in the cupboard from work.
Carbon’s Golden Malted. It’s good for pancakes or waffles, but I don’t have a waffle iron, so it shall never be.
I just used the basic pancake recipe on the back, but added some additional cinnamon and pure vanilla extract. (about a tsp-ish of each)
Then I heated up my frypan to medium-high, added a small amount of butter and oil to the pan. I use a 1/4 cup to measure my individual pancakes, but you can make them any size you’d like. Once you’ve poured the batter into the pan, add a few slices of ripe banana to each pancake (Not toooo ripe, but not a green one). Wait until the pancakes begin to bubble and look slightly dry on top, be sure to check the bottoms if they’ve browned properly before flipping. If they seem to be browning too quickly and the tops are still too gooey, turn the heat down a bit.
Then you just flip ’em, let them cook for a min or two on the other side, then remove and repeat!
These turned out really well. I know this because I only ate 3 pancakes and Michael ate the rest. Seriously.
